►Ingredients for the Chicken and Rice

►For the Chicken

6 - 7 medium to large full chicken legs
1 chipotle pepper
2 garlic cloves
1 chicken stock cube
1 tbsp oil

1/4 cup natural yogurt
2 tsp black pepper
2 tsp smoked paprika
1 tsp cayenne
1/2 tsp all spice
1 tsp onion
1 tsp garlic
1.5 tsp cumin
2 tsp oregano or thyme
1.5 tsp salt
2 tbsp distilled vinegar
3 tbsp sunflower oil

►For the Rice

3 cups basmati rice (soak in water)
4.5 cups lamb or chicken stock
3 onions
5 garlic cloves
2 inch long thick ginger
2 tbsp tomato puree
1 tsp yellow food color, mix in some water (or use saffron)
7 tbsp oil

►Spices

1/2 tsp white pepper
2 tsp red chili
2 tsp cumin
1 tsp cardamom
1/2 tsp cloves
1 tsp black pepper
2 tsp salt

2 tsp sumac
Some coriander

►For the Sauce

Handful coriander
3 - 4 thin green chilies
2 garlic clove
1/3 cup water
1 cup natural yogurt
1 tbsp mayonnaise
1/2 tsp black pepper
1 tsp sugar
1/4 citric acid
1 - 2 tbsp vinegar or lime juice
Salt to taste
