In this video, I’ll show you step-by-step how to season your snapper, “burn” your curry for that authentic flavor, and create a coconut curry sauce that will have everyone licking their plates.

🛒 Ingredients (4 servings)
• 2–3 whole snapper fish, cleaned and scaled (or snapper fillets)
• 1 lime or lemon (for washing fish)
• 1 tsp salt
• 1 tsp black pepper
• 1 tsp Maggie All purpose Seasoning
• 2 tsp curry powder (preferably Beta-pak)
• 3 tbsp vegetable oil (or coconut oil)
• 1 medium onion, sliced
• 4 cloves garlic, minced
• 1 stalk scallion, chopped
• 1 Scotch bonnet pepper, sliced (optional for heat)
• 2 Small Carrots chopped 
• 1 small bell pepper, sliced
• 2 cup coconut milk (fresh )
• Fresh thyme sprigs
• 2 - 4 pimento (allspice) berries

📝 Instructions
1. Wash & Season Fish
• Rinse snapper with lime/lemon water, pat dry.
• Season with salt and black pepper.
2. Pan-Fry the Fish (optional for more flavor)
• Heat oil in a skillet over medium heat.
• Lightly fry each side for 6–8 mins until just golden (fish will finish cooking in the sauce). Remove and set aside.
3. Make the Curry Base
• In the same pan, add 1 tbsp oil.
• Add curry powder and “burn” it for 30 seconds to release flavor.
• Add onion, garlic, scallion, ginger, bell pepper, thyme, Scotch bonnet, and pimento.
• Sauté for 2–3 mins until fragrant.
4. Add Coconut & Simmer
• Pour in coconut milk .
• Stir and let simmer for 3–4 mins so flavors blend.
5. Add Fish
• Gently place fish into the sauce. Spoon sauce over the top.
• Cover and cook on low for 8–10 mins until fish is fully cooked and tender.
6. Taste & Serve
• Adjust salt and pepper
