We went to Heji Noodles in San Gabriel to try luosifen, also called snail rice noodles. This dish comes from Liuzhou in Guangxi, China, and is often called the smelliest noodle soup in the country. The strong aroma comes from pickled bamboo shoots, not the snails themselves.
It became hugely popular during the pandemic, when instant luosifen packs sold out across China, and today it’s known as a polarizing but beloved regional specialty.
At Heji, luosifen is served with thick, chewy rice noodles in a hot and sour broth, with toppings like tofu, peanuts, and bamboo shoots. There’s also a free toppings bar where you can add sour beans, crispy soybeans, seaweed, and chili oil.
Heji also offers Guilin-style noodles, another Guangxi favorite, with rice noodles topped with pork, beef, crispy pork belly, and pickled vegetables. Both dishes highlight the bold and layered flavors that the region is known for.
