Pumpkin Palya
Ingredients
• 2–3 tsp oil
• 1/2 tsp mustard seeds
• 1/2 onion, finely chopped
• 1/2 tomato, chopped
• A pinch of salt (adjust to taste)
• A pinch of turmeric powder
• Few curry leaves
• 1/2 pumpkin (peeled & chopped into small cubes)
• 1 tsp red chilli powder (adjust to taste)
• 2–3 tbsp grated coconut
• Little water (as required for cooking)
• 1–2 tsp tamarind water
• Chopped coriander leaves (for garnish)
Preparation Method
1. Heat oil in a pan.
2. Add mustard seeds and let them splutter.
3. Add the finely chopped onion and sauté until it turns slightly soft.
4. Add chopped tomato and cook till it softens.
5. Sprinkle a pinch of salt and turmeric powder and add 6-7 curry leaves.
6. Add the chopped pumpkin pieces and mix well.
7. Add red chilli powder and grated coconut. Combine everything.
8. Pour a little water, cover the pan, and cook the pumpkin until soft.
9. Once it’s almost done, add a little tamarind water and cook for another 2–3 minutes.
10. Garnish with chopped coriander leaves and switch off the flame.
11. Serve warm with rice, chapati, or as a side dish.
