Khoresh-e Kadoo is a hearty summer tomato and turmeric based stew made with green squashes (AKA Calabasitos) and tart sour grapes. Split peas are added in the stew for extra body and substance. You can make this stew with beef, lamb, chicken thighs or mushrooms (instead of meat). The star ingredients (squash and sour grapes) make this a special treat. You can make this same recipe with zucchinies or eggplants. This recipe is often served with Persian Saffron Rice, a refreshing salad (such as Persian Shirazi salad) and pickled vegetables (Persian Torshi or Italian Giardiniera).
