This rustic Italian sheet pan dinner is full of flavour! Italian sausages roast alongside golden potatoes, sweet peppers, onions, and cherry tomatoes, seasoned with garlic, oregano, a splash of white wine, and a touch of hot chili flakes. Perfect for family meals, gatherings, or any time you want a hearty, fuss-free dinner. Serve with crusty bread and a green salad for a complete, comforting meal!
Roasted Sausage and Vegetables
Serves 8
8 Italian sausage links, each link twisted in half
6 tbsp extra virgin olive oil
4 large potatoes, peeled and cut into big chunks
4 large bell peppers, mixed colours preferably, seeded and cut into thick strips
3 large onions, sliced thickly
2 cups cherry tomatoes
1 cup cup white wine
1 teaspoon dried oregano
2-3 garlic cloves, smashed
sea salt or to taste (remember that the sausage will already be salted)
½ tsp chili pepper flakes (optional)
Preheat oven to 400 degrees ℉.
Place all ingredients in roasting pan.
Mix well.
Cover with lid or foil and bake for 1½ hour.
Remove foil, snip sausages in half. Toss gently and return to the oven for another 30 to 60 minutes or until sausage and potatoes are golden.
Serve with crusty bread and green salad.
Considerations:
Use sheet pans instead of a roasting pan and keep the sausage and vegetables in one layer. Cooking times will be less.
Substitute for your favourite vegetables.
