Today I’m sharing one of my go-to super fuel salads. Perfect long lasting fuel for an active life on the go.
It’s naturally gluten free, can be dairy free, and easily adjusted to be nightshade free. Use what you have, skip what you don’t, and make it fit your body and your family.
🥗 The Most Flexible Super Fuel Salad
Protein
Poached, shredded or chopped chicken
Beans & Legumes (optional & interchangeable)
Chickpeas
Black beans
Raw Veggies (mix and match) Chop everything small and mix well
Cucumber
Red cabbage
Cauliflower
Broccoli
Carrot
Fresh herbs (almost any are delicious!)
Leafy greens (your favourite)
Extras (choose what suits you)
Goji berries (your favourite dried berry works too — note: goji berries ARE in the nightshade family)
Toasted nuts and seeds (your favourite)
Jalapeños (nightshade)
Hemp hearts
Linseeds
Goat feta (dairy)
🥄 Simple Dressing
Fat: Olive oil
Sweet: Maple syrup or raw honey
Acid: Apple cider vinegar or lemon juice
Salt & Pepper: To taste
Optional: Mayonnaise (choose one with the most natural ingredients)
💡 Tip:If this salad sits overnight, the veggies and beans soak up the dressing. You may want to add a little extra or set some aside to add again just before eating.
