Pork Spare Ribs Stir-fry
Ingredients
• 900 grams of chopped pork ribs
• 500grams packet of green beans chopped
• 1 punnet of mini roma or cherry tomatoes
• 1 bunch of choy sum chopped
• 1 large onion sliced
• 4 garlic cloves minced
• 2 stalks spring onion cut in 2 cm long
• 1/2 tsp chilli powder or 1 fresh chilli chopped small
• 1/4 cup of oyster sauce
• 2 tablespoons or more light soy sauce
• 2 tablespoons palm sugar or normal sugar
• 1 tablespoons baking soda
• 2 tablespoons oil
• salt and pepper to season
Steps
1. Sprinkle baking soda on the meat and massage into the meat
2. Let it sit for few minutes
3. Blanch vegetables for few seconds or until half cooked then drain
4. Add water and thoroughly wash off baking soda until it's completely clean
5. Wash and cut all the vegetables
6. Add oil to the heated wok then add meat and let it brown before turning it over
7. Once the meat is brown on both sides, start adding onions, garlic, ginger, chilli powder and palm sugar.
8. Continue adding the rest of the ingredients, oyster sauce, light soy sauce.
9. Add 1 cup of water and let the meat cook until it is tender and most of the water is absorbed
10. Add the vegetables and spring onions tossed through for few minutes then turn it off.
11. Season well with salt and pepper if needed.
