🍓 Recipe 1: Butterscotch & Strawberry Parfait with Biscuit Crunch
Ingredients:
• Fresh strawberries (sliced)
• Butterscotch pudding or sauce
• Whipped cream
• Biscuit/gingernut (digestive or shortbread work well)
• A drizzle of honey (optional)
Method:
1. Crush biscuits into fine crumbs and butter for the crunchy layer.
2. In glasses, layer biscuit crumbs, butterscotch and ginger nut biscuits.
3. Repeat layers until glasses are filled.
4. Finish with a swirl of cream, a drizzle of honey, and a fresh strawberry on top.
5. Chill before serving — the perfect cottage-style summer dessert. ✨
🥥 Recipe 2: Coconut Chicken with Potatoes, Pepper & Broccoli
Ingredients:
• 3 chicken breasts (sliced)
• Miniature potatoes (cubed and parboiled)
• 1 red pepper (sliced)
• 1 small head of broccoli (florets)
• 1 1/2 can coconut milk
• 1 tsp cumin (or to taste)
• 1/2 tsp tumeric and cinnamon and a pinch of nutmeg
• Olive oil for cooking
Method:
1. Heat olive oil in a pan
2. Add chicken pieces and cook until golden.
3. Add potatoes, pepper, and broccoli. Simmer until vegetables are tender.
4. Stir in spices, then add coconut milk.
5. Serve warm with rice or crusty bread. A cozy, nourishing dinner. 🌿
