RECIPE:
Ingredients
2- sliced fennel on mandolin
1- Orange cut rough
30gr.- Pomegranate seed
1- Shallot cut on julienne
10gr.- Mint leaves
Honey Dressing
40gr.- Honey
30gr.- Mustard
50ml.- Moscatel vinegar
130ml. Olive oil
4gr. Salt & pepper
1- orange zest
Mix the honey with the vinegar, then add the grated orange zest, then add salt and pepper and the olive oil slowly
