Pavlova With Berry Compote:
ingredients for pavlova
egg whites 6
Caster sugar as required
Vanilla extracts 1 tsp
Lemon juice 2 tsp
Corn starch 1 tbsp
Fresh berries for serving
Whipped cream 150 grams for serving
Ingredients for berry compote
mixed berries (frozen) 500 grams
Granulated sugar 200 grams
Lemon juice 1 tsp
method for berry compote
in a sauce pan mix everything together and cook on low flame till thickens. Stir continuously while cooking so it won’t get burnt. Use accordingly.
Method for pavolva
in a clean stand mixer bowl, whip egg whites, cream of tartar till foamy. Start adding in sugar little at a time and whip until you get stiff peaks. Fold in corn starch and then shape it in pavlova. Bake it at 120 c for 10 minutes and then reduce the temperature to 90 c to bake it more for at least 45 minutes. Switch off the oven and let it cool down inside the oven for at least 15 minutes. Garnish it with whipped cream and fresh berries before serving.
Double chocolate ice cream:
Ingredients:
Semi-sweet chocolate 200 grams
Milk 250 grams
Granulated sugar 120 grams
Corn starch 25 grams
Cocoa powder 25 grams
Whipped cream 250 grams
Dairy cream 200 grams
Dark chocolate 150 grams
Ingredients for caramel:
Granulated Sugar 50 grams
Water 10 grams
Dairy Cream 70 grams
Method caramel
in a sauce pan melt sugar & water together till amber in
Color. Remove from heat and add in cream. Stir well. Keep aside & let it cool
Method:
In deep clean pan mix together milk, sugar, corn starch & cocoa powder. Cook it on low flame till thickens and add in chocolate, stir well. Keep aside and let it cool properly. In another deep bowl whip the cream till soft peaks and add in caramel & chocolate mixture. Fold chocolate chunks and pour the mixture in an air tight container, freeze it well for overnight
