Sama ke chawal ki kheer (also known as vrat ki kheer) is a delicious and simple dessert usually made during fasting (vrat) days like Navratri. Here’s a basic recipe:
Ingredients:
Sama ke chawal (barnyard millet) – ½ cup
Milk – 1 liter (full cream preferred)
Sugar – ½ cup (adjust to taste)
Cardamom powder – ½ tsp
Cashews – 8–10 (chopped)
Almonds – 8–10 (sliced or chopped)
Raisins – 1 tbsp
Ghee – 1 tsp
Instructions:
1. Rinse and soak the sama rice for 20–30 minutes.
2. In a heavy-bottomed pan, boil the milk. Once it starts boiling, reduce the heat and simmer.
3. Drain the soaked rice and add it to the milk. Cook on low heat, stirring occasionally to avoid burning at the bottom.
4. Cook until the rice becomes soft and the milk thickens (about 15–20 minutes).
5. Meanwhile, roast dry fruits in a little ghee until golden.
6. Add sugar, cardamom powder, and the roasted dry fruits to the kheer. Stir well and cook for another 5–7 minutes.
7. Turn off the heat. Serve warm or chilled, as you like.
