For the compound butter you can choose to use whole unsalted butter but it will take longer to whip soft. I also used lightly dried parsley because they did not have fresh parsley in the store. You can save this butter and use it on later dishes. You can choose to use any of your favorite seasonings for the roasted chicken. I like to roast my chicken to 170° because I do not like to have red on the bones when I cut the chicken. To correctly check the temperature of chicken you check at the thickest part of the thigh, which is between the thigh and the breast. I let the chicken rest at least 20 minutes before cutting into it so that the chicken will not dry out.
