🔪 Knife Sharpening Process – Chip Repair, Bevel Reset & Polishing
In this session, I worked on a Japanese kitchen knife that had visible chipping along the edge. A full reprofiling and sharpening sequence was carried out to restore and refine the blade.

🔧 Step 1 – Reprofiling & Beveling
• FSK 400 grit vitrified diamond stone
Used to re-establish the bevel and grind the edge flat to remove chips and restore clean geometry.

🔷 Step 2 – Mid-Grit Refinement
• Venev F800 diamond resin stone (7–5 micron)
Smoothed out the bevel and began refining the edge after reprofiling. Resin bond offered good control and a more refined scratch pattern.

✨ Step 3 – Pre-Strop Polishing
• Shapton Pro 5000
Polished the edge to reduce toothiness and clean up the scratch pattern before stropping.

🪞 Step 4 – Final Stropping
• 4 micron diamond strop followed by 1 micron diamond strop
Brought the edge to a high level of sharpness and clarity ko, leaving a clean, aggressive, yet refined cutting edge.

📌 Edge restored from damage to a functional, polished, and keen finish using a combination of vitrified, resin, and ceramic abrasives.
