For character appearance, I recommend using this method as not only is it easier but less time consuming looking from photo to Hex and then type byte by byte.
I claim findings for Gender change as I haven't seen anyone share how to. It's a lil complicated to know, just after making this video I looked at my other character and noticed it's 6 00's ahead than 7. Guess the first 0X is the one to edit after character name. Just make sure for for gender change you put 01 for Male or 08 for Female. Also this mod should also apply to DS3.
I also tried to get this as a quick code but seems not to be possible due to addresses and offsets being dynamic for every character. Even after testing for just my character, the 01/08 wouldn't change unless done manually. No point sadly if it's never static.
