2-3 cups cooked spinach, drain well and chop
5 eggs
3/4 cup cottage cheese
1/2 small onion, chopped
1/2 cup feta or parmesan cheese
1 cup grated cheese (for the top)
Butter a pie plate. Sprinkle feta or parmesan on the bottom of the pie plate. Mix everything except the 1 cup grated cheese. Pour spinach mixture into the pie plate, top with grated cheese. Bake at 350 for 30 minutes or until set.
