🌶️ Ghee Podi (Spicy Gunpowder) – manglore asmr Version
Ingredients:
• 2 tsp oil
• 1 cup urad dal
• 1 cup chana dal
• 2 tbsp toor dal
• 3 tbsp sesame seeds
• 75g dried red chilies
• 50g Guntur chilli
• Few curry leaves
• 1 lemon-sized tamarind piece
• 3 tsp salt
• ½ tsp hing (asafoetida)

🔪 Method:
1. Crisp the spices:
In 1 tsp oil, roast red chilies and curry leaves until chilies puff. Add tamarind and roast for 1 min. Set aside to cool.
2. Roast the lentils:
In the same pan, heat 1 tsp oil. Add urad dal, chana dal, toor dal, and sesame seeds. Roast on low until golden and aromatic. Cool completely.
3. Grind:
First blend the chili mix into a coarse powder. Then add roasted lentils, salt, and hing. Grind to your desired texture, mixing in between.
4. Store:
Keep in an airtight jar. Serve with idli, dosa, or rice along with a spoon of ghee!
