Sambal Brinjal Recipe
Ingredients:
2 medium brinjals (eggplants), cut into thick slices or wedges
Salt (to sprinkle on brinjal)
Oil (for shallow or deep frying)
For the sambal:
Ingredients 材料 (finely blended 搅幼)
120g shallots 红葱头
6 pips garlic 蒜头
25g belacan 峇拉煎
15g ginger 姜
6 red chilies 红辣椒
Seasonings 调味料:
1 tbsp tamarind juice 亚叁汁
1 tbsp sugar 糖
1/2 tsp salt 盐
1 tbsp ketchup 番茄酱
2 tbsp water 清水
Taste Profile:
• Spicy & bold: The chilies give it a kick that can be adjusted.
• Savory & umami: Especially if belacan is used.
• Slightly sweet & tangy: Thanks to the tamarind and sugar.
• Soft, melt-in-mouth brinjal: A beautiful contrast to the bold sauce
