**Carrot Cake Recipe**
1 1/2 cups sugar
1/2 cup brown sugar
3/4 cup vegetable oil
3 eggs (room temp)
2 tsp. vanilla
1/2 cup buttermilk
2 cup all purpose flour
2 tsp. baking powder
1/2 tsp baking soda
1 tsp salt
1 1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp fresh ginger or powdered form
1 cup pecans or walnuts
2 cups finely grated carrots
8 oz crushed pineapple in juice (but drain most juice)
