KELEWELE (Fried, Spicy and Delicious) is a Liberian Street Food/Snack and is well known throughout West Africa. It is originally from Ghana, West Africa. Kelewele is made from Plantains - the more black marks on the plantains, the softer the sweeter your Kelewele will be. Today, Plantains can be found everywhere – local supermarkets, online, health food stores, specialty markets. Kelewele is one of my favorite Liberian Snacks and this video focuses on my knowledge and experience of the Taste of KELEWELE while growing up in Liberia. I always bought KELEWELE in the street-McDonald Street from the market women/street vendors. The Liberian Market women are so hard working and very creative. It was delicious then and still delicious now. You may eat it alone as a snack or as a side dish with pepper chicken, fried fish, fried pepper pork or shish kabob. The Spices, Herbs, Seasonings and the Palm Oil adds a Savory Aroma. It is very delicious and easy to make and “You Can Do It”
INGREDIENTS:
6 Ripe Plantains
1 Tsp. Salt, to your liking
2 Tbsp. Cayenne Pepper, adjust to desired spice level
2 Tbsp. Chili Peppers, dried and crushed, adjust to desired spice level
1 Tbsp. Nutmeg, granulated or grated to your liking
1 Medium Size Fresh Ginger Root (4 inches), blended or grated
1 Small-Medium Size Onion, pureed
Palm Oil, or Vegetable oil of your choice
EQUIPMENT:
Grater, Chopper, Mortar-Pestle or Blender
Saucepan or Deep Fryer
Spoon
Mixing Bowl
Knife
Pan/Dripping Rack of choice
Cutting Board
Parchment Paper
Butcher Paper
Saran Wrap
STEPS-YOU CAN DO IT
1. Rinse the plantains in warm water and wipe dry.
2. Peel -remove the plantain skin.
3. Cut the plantains into thin circular, slanted or bite size pieces and
place in a large bowl.
4. Peel and cut the ginger into small pieces and grate or add to the
chopper, blender or mortar. Once chopped, blend or crushed, remove
and stir well in the bowl of plantains.
5. Peel and cut onion into small pieces and add to the chopper, blender
or mortar. Once chopped, blended or crushed, remove and slightly stir
in the bowl of plantains.
6. Blend the dried chili pepper and grate 1 whole nutmeg if you do not
have granulated nutmeg, remove and slightly stir in the bowl of
plantains.
7. Add to bowl of plantains, salt and granulated nutmeg if not grated. Stir and season to
taste.
8. Cover bowl and reserve for 30 minutes at room temperature.
9. Preheat oil to 350 degrees or until hot in a cast iron pot, saucepan or deep fryer. If using
a deep fryer, pour oil half of the measurement line. If using a pot or saucepan use your
best judgment. Please note: When the palm oil becomes hot, it releases smoke-please
ensure that you have the vent on or windows open to avoid your smoke detector from
going off. If you are frying in an open area like your back yard you are all set.
10. Place plantain in hot oil and fry until golden brown on both sides.
11. As both sides become golden brown, immediately remove the ones
that are ready and continue the process until all are fried.
