Welcome to my May Day in the English Countryside vlog.
In this cosy British May Day vlog, we celebrate the VE Day bank holiday in our old English market town of Hitchin before heading to the picturesque village of Ickwell Green for a traditional Maypole dance and spring fair. This video is filled with slow living, cottagecore vibes, home baking, springtime traditions, and a peek into peaceful English market town and village life.
As we mark VE Day, we pause to honour and thank the brave soldiers who served during the war. Their courage and sacrifice gave us the peace we cherish today. We remember them with deep gratitude.

🍯 Almond Biscuits with Lemon Curd Filling (Egg-Free)
Ingredients:
150g ground almonds
6 tbsp honey
2–3 tbsp caster sugar (optional, based on your sweetness preference)
½ tsp vanilla extract (or almond extract)
Pinch of salt
Lemon curd (about ½ tsp per biscuit)
Method:
Preheat your oven to 180°C (160°C fan) / 350°F. Line a baking tray with parchment paper.
In a large mixing bowl, combine the ground almonds, caster sugar, and salt.
Stir in the honey and vanilla extract until the dough comes together. You may need to add a little extra honey if the dough is too crumbly. It should be soft but not sticky.
Roll the dough into small balls (about walnut size) and place them on the baking tray.
Create a small dip in the centre of each ball using your thumb or a spoon.
Fill each dip with about ½ tsp of lemon curd.
Bake for 12–15 minutes or until golden brown at the edges.
Cool on the tray, allowing the lemon curd to set.
