Simple Chicken Drumstick Stew Recipe

Ingredients:
1.5kg chicken drumsticks, skin off
2 large potatoes, cut into large bite size pieces
2 large tomatoes, roughly chopped
3 large carrots, cut into chunks
200g of button mushrooms, cut into halves
1 large onion, sliced
8 cloves of garlic and 1 1/2 inches of ginger, roughly pounded
1/3 cup of olive oil
6 small bay leaves
6 cloves
6 green cardamom pods
1/2 inch cinnamon stick
1 star anise ( optional)
1 1/2 tsp of ground coriander and cumin
1 tsp of crushed black pepper
1 tsp of paprika
1/2 tsp of ground turmeric
1 chicken stock cube
Salt to taste
Some chopped coriander leaves
Note: Please adjust the spices according to your taste
