SPRING IS IN THE AIR!
This is our High Contrast cocktail. A visually appealing highball with some magical properties. It contains a syrup made of butterfly pea flower. This syrup has the ability to transform colours when citric acid is introduced, turning its Blue hue into an eye catching Indigo colour.
Very refreshing and easy to build, this riff on a classic Tom Collins is a sure winner. Top Shelf orange bitters adds a little ginger spice to the palate and reinforces the orange flavours of the Orange Cream soda water. Lemon, Orange, Vanilla, Ginger and a super cool colour changing syrup. This bad boy is a glass of fresh refreshment on a warm summer day.
Orange Cream soda water available through Dominion City Brewers in Ottawa, On. This can be substituted for any flavoured soda water of your choice, including flavourless soda water for a more classic Tom Collins Flavour.
INGREDIENTS
1 ½ oz Top Shelf Gin
1 oz Lemon Juice
¾ oz Butterfly Pea Flower Syrup
3 Dashes Top Shelf Just Picked Orange Bitters
Dominion City Orange Cream Soda Water
Lemon Wheel or Zest (Garnish)
GARNISH
Lemon Wheel or Zest
GLASSWARE
Collins Glass
DIRECTIONS
In a Collins glass filled with ice, add gin, butterfly pea flower syrup, and orange bitters.
Top up with Orange Cream soda water, leaving about 2 inches room from the brim. Slowly pour in the lemon juice. Garnish with lemon wheel or lemon zest. Stir gently to change colour.
