Island Marinated Chicken
Have you ever been to a Pacific Islanders home or party? If not, I bet you’ve tried Hawaiian barbecue. Yes? Well if you have, you know we marinate our meat like no other. If you haven’t, don’t worry, you will be cooking up perfect meat that will surely be a crowd pleaser.💥
This sweet and savory recipe has the perfect marination that never disappoints. The marinade is so easy and goes well with most meats. These boneless and skinless chicken thighs are juicy, tender and full of flavor. You won’t go back to a basic marinade after trying this recipe out, I promise. ✨
I grew up eating barbecued chicken and ribs that were marinated in a very similar recipe. The ingredients may be slightly different in each household, but the tight-knit bond that barbecues bring to our family is unforgettable. After trying and testing marinades, I came up with this perfect recipe that I hope you will give a try. Enjoy! 😋

Prep time: 10 minutes
Cook: 20 minutes
Total: 1 hour 30 minutes (includes 1 hour marination)
Ingredients
•1/4 medium white onion, chopped
•2 cloves garlic, chopped
•3 pounds boneless, skinless chicken thighs
•1 tablespoon black pepper
•1 tablespoon garlic powder
•1 teaspoon ginger powder
•1/2 cup soy sauce
•2 tablespoons brown sugar
•1/4 cup distilled white vinegar
•1/4 cup water
🌿 green onions - to garnish
Directions
In a medium or large mixing bowl - add the onions, garlic, chicken, black pepper, garlic powder and ginger powder. Mix everything together by ensuring the chicken is coated in all the spices. Set to the side.
In a small measuring cup, add the soy sauce and brown sugar. Stir to combine. Then pour into mixing bowl.
Now add the vinegar and water to the mixing bowl and ensure chicken is completely soaked in marinade. You can also store in a freezer or storage bag. Allow to marinate for at least an hour.
Next, grill meat on medium-high heat for about 7 minutes on each side. Lower heat, flip and continue to cook for another 5 minutes.
Garnish grilled/bbq chicken with green onions and serve with your favorite sides. Enjoy!
Helpful tips
•For best results, watch + listen to the full video before beginning this recipe.
•Kikkoman soy sauce is highly recommended. Soy sauce can really make a difference.
•If you prefer a sweeter marinade, add another tablespoon of brown sugar. You can also taste test the mixture - prior to adding the raw meat.
•Marinate for at least an hour, or refrigerate if longer — the longer the marination, the better.
