Fajitas al Disco: Demonstrating My New Cowboy Wok or Discada from Southwest Disk

When I speak English I usually call it a discada. In Spanish discada refers to the delicious stir fried meats and vegetables that are prepared in these. The Spanish term is “disco”. To not be confused with ‘70s era dance music, English speakers often have many names for these cooking vessels converted from a plow disk (or disc). Cowboy Wok, plow disc cooker, discada, disk grill are some of the more common ones. I first saw one during the mid 1990’s it was hand crafted by the fellow who was cooking with it. Since I don’t have welding skills to make my own I bought one someone who does have the skills to make excellent ones. I purchased this one from www.southwestdisk.com , out of Albuquerque, NM.
