Cucumber Namasu is the perfect summer salad. It’s quick to make and only requires a few ingredients! I’ve included a traditional as well as a more savory version in this video, try bringing this on your next picnic!
Ingredients
2 Cucumbers
1 Tbsp salt
1 Roma tomato
1/4 Medium red onion
4 Tsp Rice vinegar
4 Tsp Sesame oil
4 Tsp Mayo (for mayo version)
Start by slicing the cucumbers lengthwise and using a spoon to scoop out the seeds and from there cut into wedges or whatever shape you’d like.
Place cucumber wedges in a bowl and sprinkle with salt. Give it a little stir to make sure all the pieces are salted and set aside for at least 20 minutes
Dice tomato and red onion (if using onion)
Place cucumbers in a colander and give them a quick rinse. Place rinsed cucumbers in a clean dish towel and squeeze out the excess moisture
Place rinsed cucumbers back into a large bowl. From there, add the vinegar, sesame oil, and mayo (if making mayo version).
Give it a good stir and enjoy!
