Recipe:
70g dried chillis
3 cloves garlic
1 medium onion
Thumb size ginger
3 tbsp oil, for blending
1 tbsp brown sugar
1/2 tsp salt
4 tbsp oil for sauté
Method:
Cut the washed dried chilli into small pieces. Soak in hot water for 15 minutes, drain the water and add into the blender, then add in garlic, onion, ginger and oil. Blend the chilli into fine paste, heat oil in a saucepan, sauté the chilli paste till the oil is separated from it. Let it cool completely and keep in refrigerator for up to 2 weeks! The paste will last for three months in the freezer.
