Chatkhara boti
Ingredients
Undercut 1 ½ inch pieces 750 gm
Papaya paste 2 tbsp
Lemon juice 3 tbsp
Green chilies grinded 8
Ginger garlic paste grinded 2 tbsp
Brown onion crushed 4 tbsp
Hung curd 4 tbsp
Turmeric pinch
Coriander powder 1 tsp
Chili powder 1 tbsp
Crushed red pepper 1 tsp
Paprika 1 tsp
Chat masala 1 tsp
Roasted & ground cumin 2 tsp
Allspice powder 1 tsp
Salt 1 tsp
Ingredients for coating
Bread crumbs as required
Eggs 2
Water ¼ cup
Method
Marinate undercut boties with papaya for 30 mins, now mix all the ingredients together and marinate beef boti in this for at least 2 hours. Now coat the marinated boties in bread crumbs, dip in beaten egg and water mixture, deep fry on medium heat, serve with salad, raita and parathas.
Mutton makhani
Ingredients
Mutton 750 gm
Ginger garlic paste 1 tbsp
Yogurt ¾ cup
Salt 1 tsp
Turmeric ½ tsp
Black pepper 1 tsp
Chili powder 1 ½ tsp
Oil ¼ cup
Butter 2 ounce
Ingredients for gravy
Oil ¼ cup
Butter 2 ounce
Onion chopped 1 cup
Tomatoes chopperised 1 ½ cup
Green chilies chopped 4
Ginger finely chopped 1 tbsp
Garlic finely chopped 1 tbsp
Cashew nuts grinded ¼ cup
Chili powder 1 ½ tsp
Paprika 1 tsp
Roasted /crushed coriander 1 tsp
Roasted and crushed cumin 1 ½ tsp
Green cardamom grinded ½ tsp
Tomato puree 2 tbsp
Ketchup 2 tbsp
Sugar 1 tbsp
Water ½ cup
Dried fenugreek 1 ½ tsp
Cream cheese 2 tbsp
Fresh cream 2 tbsp
Tandoori color pinch
Method
Marinate mutton with all the given ingredients for 2 hours, heat oil and butter in a pressure cooker, cook mutton for 30 mins, once the mutton tender, remove and keep aside. Prepare gravy by heating oil and butter in a pan, add onion, chopped ginger garlic, chopperised tomatoes, chopped green chilies, cashew nuts grinded, fry till onion golden and tomatoes tender, now remove and blend this into a fine paste, return the paste to the same pan with some more oil, add in chili powder paprika, all the dry spices, ¼ cup water, fry well, now add in this cooked mutton with cream cheese, color, ketchup, tomato puree, kasuri methi, sugar and allspice, cover and simmer for 10 mins. Lastly add butter, chopped coriander and serve.
Brownie malt shots
Ingredients for pudding
Vanilla pudding 2 packets
Cream ½ cup
Cream cheese ½ cup
Condensed milk ½ tin
Whipped cream 1 cup
Brownie chunks 1 cup
Milk to soak ½ cup
Chocolate ganache 1 cup
Chocolate malt powder 2 tbsp
Grated chocolate ½ cup
Method
Make pudding mixture with vanilla pudding mix, when cool add cream, cream cheese, milk and whipped cream.
To assemble
Layer some crumbled brownies at the bottom of shot glasses, dissolve milo in some milk and drizzle milk to soak the brownies, mix 4 tbsp milo in the prepared pudding mixture, also mix milo in the prepared ganache. Now add a layer of malted ganache to the glass, then the pudding and again milk soaked brownies, then the ganache, repeat. Lastly decorate with grated chocolates and fresh cream.
