Ingredients:
1 medium head of cauliflower
3 tablespoons olive oil
2 cloves garlic, minced
1 tablespoon fresh herbs, chopped (such as rosemary, thyme, or parsley, or a mix)
½ teaspoon salt, or to taste
¼ teaspoon black pepper, or to taste
Optional: Lemon wedges for serving
Equipment:
Large knife
Cutting board
Small bowl
Baking sheet
Parchment paper (optional, for easier cleanup)
Instructions:
Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper for easier cleanup, if desired.
Prepare the cauliflower: Wash the cauliflower head. Remove the outer leaves and the thick bottom stem. Place the cauliflower stem-side down on your cutting board. Using a large, sharp knife, carefully cut through the center of the cauliflower to create two thick "steaks" (about 1-1.5 inches thick). You'll likely get some florets that break off – don't worry, you can roast these alongside the steaks!
Make the garlic herb oil: In a small bowl, whisk together the olive oil, minced garlic, and chopped fresh herbs. Season with salt and pepper.
Season the cauliflower: Place the cauliflower steaks (and any loose florets) on the prepared baking sheet. Brush both sides of the cauliflower steaks and the florets generously with the garlic herb oil. Make sure the garlic and herbs are distributed evenly.
Roast the cauliflower: Transfer the baking sheet to the preheated oven and roast for 25-30 minutes, or until the cauliflower is tender and golden brown on the edges. The exact cooking time will depend on the thickness of your steaks and your oven. You can flip the steaks halfway through if you like, to ensure even browning.
Serve: Carefully remove the baking sheet from the oven. Serve the roasted cauliflower steaks immediately. You can garnish with fresh herbs or a squeeze of lemon juice for extra brightness, if desired.
