Chyavanprash, originally Chayavanaprasham, is a cooked mixture of sugar, honey, ghee, Indian gooseberry (amla), sesame oil, berries and various herbs and spices. It is prepared as per the instructions suggested in Ayurvedic texts. Chyavanprash is widely sold and consumed in India as a dietary supplement.
Chyavanaprash is usually consumed directly. It can also be consumed along with warm water. Chyavanaprash tastes sweet and sour at the same time. The taste is dominated by the flavors of honey, ghee and amla, and the smell by ghee and other spices including sandalwood, cinnamon and cardamom.
Ingredient
For Amla Paste:
Indian Gooseberry/ Amla - 500 grams (approximately 12 large Amla)
Water - to steam
Water - 1 cup (if Amla is not grinding to a fine Paste)
For Date Paste:
Date - 200 grams
Water - 1 cup
(Boil the Date with Water. Cool it. Grind it.)
For Spice Powder:
Dry Tulsi (Indian Holy Basil) leaves - 2 tablespoon
Dry Ginger Powder - 1/2 tablespoon + 1/2 teaspoon
Cloves - 10 nos
Green Cardamom - 10 nos
Cinnamon - 1 inch
Cumin - 1 teaspoon
Peppercorn - 2 tablespoon
Mace Powder - 1/2 teaspoon
Fennel - 2 tablespoon
Dried Rose Petal - 2 tablespoon
Bay Leaves - 3 nos
Long Pepper - 10 nos
For Chywanprash:
Ghee - 2 tablespoon
Sesame Oil - 2 tablespoon
Amla Paste - prepared
Date Paste - 1 cup
Jaggery - 500 grams (1.5 cup)
Spice Powder - prepared
Salt - 1/4 teaspoon
Honey - 1/2 cup
Saffron - 1/4 teaspoon
