Remember the old song "Are You Going To Scarborough Fair"? These rolls brought that song to mind because of the ingredients and I sang it in my head all day! Lets make some savory rolls.
Ingredients
1 cup Milk, warmed to 110 F
1 Tbsp Active Dry yeast
1 Tbsp granulated sugar
½ tsp salt
1/8 tsp parsley
1/8 tsp sage
1/8 tsp rosemary
1/8 tsp thyme
4 Tbsp butter, melted and cooled
4 – 4 ½ cups bread flour
Directions
Preheat oven to 452 F
Into a mixing bowl add the milk and yeast. Stir to incorporate, and allow the yeast to activate for 5 minutes.
Place your dough hook on your mixer at this time. If you do not have a mixer with a dough hook, this can be done by hand, but will require effort as the dough forms, thickens and becomes quite stiff.
Add to the bowl the next 7 ingredients and ½ cup of flour. Mix on slow to incorporate without throwing flour all over your kitchen. Once incorporated, add another ½ cup of flour and mix again.
Continue adding flour ½ cup at a time until a stiff dough forms.
Turn out onto floured surface and knead for about 5 minutes or until your dough sticks together well. Then place the dough in a buttered bowl, turning it to coat with the butter. Cover with a tea towel and place in a warm area to rise for 1 hour or until dough has doubled in size. Note: if your kitchen is on the cooler side this may take a bit longer.
Remove the tea towel, turn dough again, and begin pinching off dough to form balls about the size of a hens egg. Place these in a buttered pan, close together but not touching and continue until you have used all the dough.
Cover and allow to rise again for 5 minutes. Cook rolls in a 452 F oven for 12 to 15 minutes or until golden brown. Allow to cool and enjoy.
Kitchen Note: for softer rolls, brush the tops of rolls with a pastry brush and butter immediately after removing them from the oven.
