DIRECTIONS:
► Add all ingredients to a high-speed blender and blend until completely smooth.
► Taste and adjust sweetness or acidity as needed - mixture should taste slightly sweeter than desired when frozen.
► Pour into popsicle molds, leaving about 1/4 inch of space at the top for expansion.
► Add lid and insert sticks. Freeze for at least 6 hours, or overnight.
► To release, run the mold under warm water for 10–15 seconds, then gently slide popsicles out.
STORAGE:
► Once frozen, remove popsicles from the mold and wrap each one in parchment paper to prevent sticking. Store them in an airtight freezer-safe bag or container to avoid freezer burn. For best quality, enjoy within 2 months.
NOTES:
► All recipes make 30 oz of mixture total, to make 10 popsicles (3-oz each). Feel free to scale down recipes if using a smaller mold, or making fewer popsicles.

#2 - STRAWBERRY MANGO LAYERED POPSICLES
(48 calories/popsicle x 10 popsicles)
Strawberry Layer:
► Coconut water (3/4 cup / 177 ml)
► Fresh strawberries (1.5 cups / 216 g)
► Honey (1.5 tbsp / 31 g)
► Lemon juice (1 tsp / 5 ml)
Mango Layer:
► Coconut water (3/4 cup / 177 ml)
► Mango chunks (1.5 cups / 247 g)
► Honey (1.5 tbsp / 31 g)
► Lemon juice (1 tsp / 5 ml)
*Freeze 1 layer for 1 hour first to let it thicken up, before adding the second layer to allow for separation.

► Almond milk (1 cup / 236 ml)
► Unsweetened cocoa powder (1/4 cup / 21 g)

► Vanilla extract (1 tsp / 5 ml)
► Pinch of salt
► Melted chocolate chips (1/3 cup / 60 g) - or swap with an extra 1/4 cup (21 g) of cocoa powder
