In this video, I’m taking you straight to the heart of Jamaica with a flavorful, comforting dish: Fried Saltfish and Okra served with golden fried dumplings. This meal is perfect for breakfast, lunch, or even dinner – hearty, budget-friendly, and packed with Caribbean flavor.
You’ll learn how to properly soak and season the saltfish, cook it down with okra and fresh herbs, and fry up crispy yet soft Jamaican-style dumplings. Whether you’re from the islands or just love authentic Caribbean food, this recipe will have your taste buds dancing.
INGREDIENTS:
For Fried Saltfish & Okra:
• 1/2 Lbs Salted codfish (saltfish)
• 1 Dozen Fresh okra (sliced)
• 1/2 White Onion
• 1/2 Bell peppers (red/green)
• 3 Garlic Cloves
• Scotch bonnet pepper (to tolerance)
• 2 Stalks Thyme
• 1 Small Tomato
• 1/2 Tsp Black pepper
• 3 Tbsp Coconut oil or vegetable oil
• 1 Tsp Fish Seasoning
METHOD:
1. Soak or boil saltfish to remove excess salt.
2. Debone and flake saltfish.
3. Sauté vegetables, then add saltfish and okra.
4. Season to taste with black pepper, fish seasoning and cook until flavors combine and enjoy with your flavor side dish
