Chicken Stock:
1 Medium Chicken (1.5kg) cut into 4-6 pieces
2 Medium Onions
2 Cloves of Garlic
1 Tbsp Olive Oil
1 Tbsp Salt
1 Tsp Black Peppercorns
2 Bay Leaves
1 Cinnamon stick
2 Small Pieces of Mastic
10 Cardamom Pods
Freekeh:
1 Cup Freekeh (pick through and wash very thoroughly)
1 Small Onion
1 Tsp Salt
1 Tsp Ground Cardamom
1/2 Tsp Black Pepper
