I just finished digging 2 rows of spuds with my vintage 1900 John Deere Potato plow (digger) and am picking them up and boxing them. We always used 5 gallon pails on market garden in Taylor and dumped these into gunny sacks which were then dumped down chutes through root cellar roof to form piles =ing around 120 tons with 1 60 ton piles on each side of partition running down middle of main cellar. There was a old furnace blower hooked up to ventilation shaft running down middle of each pile and a chimney that ensured fresh air as vegetables need some fresh air. They have to be stored unwashed so the bacterium on their skins remains intact otherwise they are unprotected and will go bad quickly in storage. As these are removed in small batches from cellar these would be then washed, bagged to be sold to consumers in batches. However in my case these will remain in boxes in my garage inside one of my autos with small heater with thermostat at around 40 ferhenheit, that way I don't have to heat entire garage. I also have an old refrigerator for beats and carrots that has temperature adjusted for just above freezing, these will also be stored in boxes and left with dirt on for longer storage well into winter. I will remove in small batches each week to be washed at home before use.
