First, what is Tortang Talong in English? It is “Eggplant Omelette”.
This delicious, classic recipe is a perfect go-to in most Filipino households. This is because it is quick, easy, and best of all, absolutely tasty without sacrificing nutritional value.
You can definitely cook this healthy and delicious dish in 30 minutes. It is very easy to make.
If you are a vegetarian, you will enjoy this dish as well.
Start out by boiling the eggplants for at least 15 minutes until they are tender. You can also grill the eggplants as another option.
Then, make the mixture. Crack open 4 eggs. Add 1/2 cup of flour. Sprinkle some cilantro. Add pepper and salt to taste. Whisk the mixture well until it is frothy. That is when mixture has many small air bubbles on its surface.
After removing the eggplants from the boiling water, let it cool for couple of minutes. Then, remove the skin of the eggplants and diced them.
Add the eggplants to the mixture. For more flavor, I added 2 tablespoons of shrimp bouillon powder. But this is optional, especially if you are vegetarian.
Check the taste and make sure it is within your preference.
Pour olive oil to the pan, and place your coated eggplants. Fry them each side for at least 3 minutes until it is golden brown.
Make new batches until you finish the whole mixture.
Lastly, serve them into a plate over rice and ketchup. Viola! Your Tortang Talong aka Eggplant Omelette is all set and ready!
