Ingredients Used:
Maida – 2 cups
Eggs – 2
Milk – 1 cup
Oil or Butter – 1 tbsp
Rum – 4 tsp
Vanilla Extract – 1 tsp
Baking Powder – 1/2 tsp
Baking Soda – 1/2 tsp
Salt – a pinch
Melted Jaggery – 2 cups
Mixed Dry Fruits (Tutti Frutti, Cranberries, Black Raisins, Cashew, Almond) – 1/2 cup
Optional Spices: Nutmeg powder, Ginger powder, Cinnamon powder, Black Pepper powder
Dry fruits are soaked for 24 hours for better taste and softness.
How to Make Christmas Jaggery Dry Fruit Cake:
Preheat the oven at 180°C for 10 minutes.
In a bowl, whisk eggs with melted jaggery until smooth.
Add milk, oil or butter, rum and vanilla extract. Mix well.
Sieve maida, baking powder, baking soda and salt together.
Gradually add dry ingredients to the wet mixture.
Add soaked dry fruits and optional spice powders.
Mix gently to form a smooth cake batter.
Pour batter into a greased cake tin.
Bake at 180°C for 55 minutes.
Cool completely, slice and serve.
