Quick & Easy Cinnamon Rolls (gluten free & lactose free)

Quick & Easy Cinnamon Rolls😍 This recipe is gluten-free & lactose-free! The dough doesn’t contain yeast, so that’s why these cinnamon rolls are a lot quicker to make! If you aren’t coeliac or intolerant to gluten, wheat flour should work in this recipe too!☺️
Ingredients:
1 1/2 cups lactose-free Greek yogurt (360 ml)
2 tsp vanilla extract
2 tablespoons brown sugar or coconut sugar
2 cups all purpose gluten-free flour mix (480 ml) (if the dough seems too loose add a bit more flour)
1 tablespoon baking powder
Filling:
1/4 cup almost melted lactose-free butter (or coconut oil) (60 ml)
1/2 cup brown sugar or coconut sugar (120 ml)
1 tablespoon cinnamon
Frosting:
3.5 oz lactose-free cream cheese (100 g)
4 tablespoons maple syrup
2 teaspoons vanilla extract
1. Mix the yogurt, vanilla and sugar together
2. Add the flour and baking powder and stir until combined
3. On a floured surface roll the dough into a rectangle
4. Then mix the ingredients of the filling together
5. Spread the filling on top of the dough and then roll into a cinnamon roll shape and cut into pieces (you can use dental floss to cut the dough easily)
6. Place the rolls into a greased baking dish. Brush the rolls with a little bit of melted butter
7. Bake at 180 Celsius degrees (350 in Fahrenheit) for about 15-20 minutes
8. Let them cool down for a few minutes. Meanwhile make the frosting. Add the frosting on top of the cinnamon rolls and enjoy!
