Which are offered to Lord Jagannath at the Holy Temple Puri, located in Odisha . Badia Dalma means varieties of country vegetables are cooked along with lentil which is thick and very healthy as well . Ghia Anna means ( Ghee / Clarified butter ) + Anna ( Rice ) . This Aromatic and flavourful Ghee Rice goes very well with the Badia Dalma.

Ingredients : ( Serving - 3 persons )
For Badia Dalama / Badia Dalma Recipe :
1. Pigeon Pea ( Harada Dali / Arahar ) - 1 cup ( 125 gm ) or 4 palmful
2. Grated Coconut ( Nadia Kora ) - ( 3 - 4 tbsp )
3. Diced Pumpkin ( Boita Kakharu ) - 1/2 cup ( with skin )
4. Diced Pointed Gourd ( Potala ) - 2 nos.
5. Diced Spine Gourd ( Kankada ) - 1 no. ( big - 1 & small - 2 )
6. Diced Yam ( Khamba Alu ) - 1/4 cup
7. Diced Raw Banana ( Kancha Kadali ) - 1 no. ( small ) , 1/4 cup
8. Crushed Ginger ( Chhecha Ada ) - 2 inch or 1 tbsp
9. Cumin Seeds ( Jeera ) - 1 tbsp
10. Bay Leaves ( Teja Patra ) - 2
11. Black Pepper Powder ( Kala Golmaricha Gunda ) - 1 tbsp
12. Jaggery ( Guda ) - 1/2 tbsp
13. Turmeric Powder ( Haladi Gunda ) - 1 tbsp
14. Salt ( Luna ) - as per taste
15. Ghee / Clarified Butter ( Ghia ) - as required
16. Water - 4 cups ( 125 ml cup )
For Ghia Anna / Ghee Rice Recipe :
1. Raw Rice ( Arua Chaula ) - 3/4 cup ( or 3 palmful ) 100gm ( approx. )
2. Water - ( 2½ cups ) or You can add 3 times water of Rice for soft Rice
3. Ghee ( Clarified Butter ) - 3 tbsp ( or as required )
4. Lemon Juice ( Lembu Rasa ) - 1/2 no. ( or 1½ tbsp )
5. Salt to taste ( or 1/4 tsp )
