Kurdish Sumac Kofta with Chicken | Traditional Kurdish Recipe

Kurdish Sumac Kofta is a beloved traditional dish from the mountains of Kurdistan — tangy, hearty, and full of rich flavors.
It’s made with ground chicken, onions, carrots, bell peppers, and the star ingredient: sumac, which gives the dish its signature sour and aromatic taste.

These koftas are simmered slowly in a tomato-sumac sauce until tender, flavorful, and beautifully infused with the taste of the land.
There’s no egg or rice in this traditional version — just simple, wholesome ingredients blended with love and patience.

Ingredients (serves 4):

500 g ground chicken breast or thigh

2 medium onions

1 medium carrot

1 green or colored bell pepper

2–3 tbsp red sumac (fresh or dried)

1 tbsp chickpea flour or wheat flour (optional, for texture)

2 tbsp tomato paste

Salt, black pepper, turmeric – to taste

Oil – as needed

2 cups boiling water
