The traditional livestock farming in the Alborz Mountains dates back hundreds of years. During this time, the people living in the Alborz region have adapted to this way of life and have become one with nature.
The Galeshi lifestyle, or livestock farming, begins early in the morning with milking the cows. After that, the animals are taken out to graze in the pastures. This moment marks the start of the milk processing operations. The milk is first boiled and then traditionally converted into yogurt. Yogurt serves as the base for most dairy products. From yogurt, butter, buttermilk, and Kashk are produced. In most Galeshi areas, the final dairy products offered to the market are butter and buttermilk. In the western Caspian region, most galeshs use a "Doushan" to separate butter from yogurt. A Doushan is a large pot that continuously shakes to separate the fat from the yogurt.
