🥓 Instructions: Keto Crustless Spinach Cottage Cheese Quiche
Cook the bacon in a skillet over medium heat until crispy. Remove from pan and set aside on paper towels to drain.
Dice the red bell pepper into small cubes.
In a blender, add the cottage cheese and eggs. Blend for about 30 seconds until the mixture is smooth.
In a baking dish, combine:
The diced red pepper
Squeezed spinach (make sure all excess water is removed)
Mozzarella cheese
The chopped bacon
Pour in the blended cottage cheese and egg mixture.
Top with a bit more mozzarella cheese if desired.
Add Feta Cheese (optional)
Bake in a preheated oven at 350°F (175°C) for 25 minutes, or until the center is set and the top is golden.
