Vanilla slice pies? Yessiree! All the flavour of a traditional vanilla slice but the convenience of it being tucked into a pie. They are so easy to make which is wonderful because you’ll make them over and over and over again.

What You’ll Need
100g packet vanilla instant pudding
150ml milk
300ml thickened cream
3 sheets pastry – puff or shortcrust
What To Do
1. Add the vanilla instant pudding, milk and cream into a bowl and whisk until well mixed. Refrigerate until ready to use.
2. Allow pastry to defrost if frozen and use a pastry cutter to make base of pie tops. I used shortcrust pastry for the base and puff pastry for the tops but using just puff or shortcrust is fine. The mixture produced 6 mini pies.
3. Place the base pastry in the pie maker cook for around 2 minutes with the lid open. This will minimise the pastry going soggy.
4. Spoon the vanilla mixture into each of the pastry bases. Top with 4 of the pastry lids and close the lid of the pie maker.
5. Cook until the pastry is cooked and golden – about 8 minutes. Set aside to cool.
6. May be reheated, eaten at room temperature or chilled.
