Hello, my dear friends💛❄️
As the year gently comes to an end, we choose quiet moments, warmth, and simplicity. ❄️
We were staying at a countryside cottage, but a heavy winter storm led us to return home to celebrate the end of the year in a calm and cozy way.
The day begins slowly with baking a cardamom fruit cake for a simple snack, followed by small everyday household routines. I also prepare Hilma’s dinner, a nourishing meal of boiled chicken and carrots 🐶🤍.
For our year-end dinner, I prepare a comforting Nordic menu:
Starter: Clear mushroom consommé
Main course: Roasted black grouse with lingonberry and roasted root vegetables
Dessert: Baked Apple with Honey, Nuts & Cinnamon
The evening ends quietly by the warm fireplace, watching a movie while the cold winter night settles outside. A peaceful farewell to the year, filled with slow living, home cooking, and gratitude.

🍰 Cardamom Fruit Mix Cake 🍰
🧺 Ingredients📌
100 g fruit mix (chopped if pieces are large)
120 g soft butter
120 g sugar (white or light brown)
2 eggs
150 g all-purpose flour
1½ tsp baking powder
1 tsp vanilla sugar or extract
2–3 tbsp milk or yogurt
1½ tsp ground cardamom
Pinch of salt
Optional: zest of ½ lemon or orange
1 tbsp flour (for fruit mix toss)
🍯 Glaze (Optional)
Mix: 3–4 tbsp powdered sugar with 1–2 tsp warm water, milk, or lemon juice.
Drizzle over the warm cake.
🍯Topping (Optional)
Orang zest
Instructions📌
1. Preheat oven to 175°C.
2. Line or butter a small loaf tin or round pan.
3. Soak the fruit mix in warm water, orange juice, or tea for 15 minutes, then drain. Toss with 1 tbsp flour.
4. Cream butter and sugar until light and fluffy.
5. Add eggs, one at a time, mixing well.
5. Stir in cardamom, vanilla extract, and citrus zest.
7. In another bowl, mix flour, baking powder, and salt.
8. Add dry ingredients to the batter, alternating with milk/yogurt.
9. Mix gently, don’t overmix.
10. Fold in the fruit mix.
11. Pour into the tin and smooth the top.
12. Bake 35–45 minutes, until golden and a skewer comes out clean.
