Frugal and Rich Quiche and why it's good for you if you have osteoporosis too!
Using mostly store brand, Aldis, Winn Dixie and DG items, I'm able to make a deep dish quiche for my husband and I at FAR less than what Publix and even Aldi offer a full pie for. Publix is $8 for 2 slices, mine is less than $5 for 6 big slices or 7-8 slightly smaller slices, ie less than a $1 a slice for a dinner, lunch or brunch entree. Can be frozen and reheated perfectly too. Apologies for saying it was $3.50 for pie, as I hadn't factored in cottage cheese. $5 is much more accurate. I'm on a learning curve and I appreciate your patience.
Aldis pie crust - 1.99 for 2. I used $1 worth of crust
Aldis shredded cheddar - $3.50 for 16 oz. I used $1.50 worth 1 cup
DG cottage cheese 1/2 cup ,50
Roma tomato - .20
Yellow onion - .20
Green onions - .25
Winn Dixie house brand powdered milk. 1/2 cup reconstituted powdered milk - .25
DG flour - quarter cup - .15
DG vegetable oil - 1 tablespoon - .15
Aldis Golden Hen eggs - 1.95/dozen - 6 eggs at about .90 (use 7 eggs if you want a deeper dish quiche).
Total give or take - $5.10 less than $1 per slice.
Mix eggs, cottage cheese, milk, flour, oil, salt and pepper and a little hot sauce if you like. Pour into buttered and floured deep dish pie pan over the crust that has been laid in. Add in the tomatoes, both onions and slowly add in shredded cheese, leaving some for to top it. Bake at 375 for 50 mins. Check with knife to see if it is set in center. Turn off oven and leave in hot oven another 20 mins. To keep crust from overbrowning, you can foil the crust 30 minutes into baking, which I should have done! Next time! Let cool and serve. Easily frozen and reheated.
