When you need a filling and super-flavorful stew that will make EVERYONE happy this Indian Spiced Roasted Cauliflower Stew seriously does it all! (It's one of my most popular recipes and also a personal fav!)
Perfect if you're trying to go more plant-based, are watching calories or WW SP, eating low carb, or are Vegetarian, Vegan, Gluten Free or Dairy Free. (It seriously works for any diet plan!)
This super flavorful dish freezes really well so it's awesome for Meal Prep too! I tuck leftovers in individual containers to have for lunch, dinner or a healthy snack anytime.
The secret? A mix of roasted AND pureed cauliflower gives it amazing thickness without cream. It's packed with veggies and chickpeas to make it meatless but hearty and substantial. Plus a mix of spices gives it incredible flavor without being spicy! In the video I give lots of ideas for ingredient swaps too so you can use up whatever veggies you like or have on hand.
