Today I’m sharing with you a plum cream cheese cake recipe. It's a wonderfully juicy, creamy and soft - a perfect for teatime treat.

1 ½ cup (305g) cream cheese, room temperature
3 medium eggs, room temperature
2/3 cup (150g) white granulated sugar
½ cup (113g) cooled melted unsalted butter
1 ½ cup (190g) all purpose flour
½ tsp. (4g) baking soda
pinch of salt
8 oz. (about 230g) plum
Instructions:
1. Preheat the oven to 350 degrees Fahrenheit or 180 degrees Celsius.
2. Prepare about 8 ounces of plums - wash, dry, and slice them. Set aside.
3. Mix together the dry ingredients: 1 ½ cup of all-purpose flour, ½ tsp. of baking soda, 1 tsp. of vanilla flavoring and pinch of salt.
4. In a mixing bowl, combine 1 and ½ cup of cream cheese, 2/3 cup of white granulated sugar and 3 medium eggs Beat on high speed until smooth and well combined. Then add ½ cup of cooled, melted unsalted butter and mix for about 1 minute, until fully incorporated.
5. Gradually add the dry ingredients and mix everything is well combined.
6. Use an 8 inch cake pan greased and dusted with flour and lined with parchment paper. Pour the batter into the prepared cake pan and arrange the sliced plums on top.
7. Bake in a preheated oven for about 45 to 50 minutes or until a toothpick inserted into the center comes out clean.
8. Once baked, let the cake cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely.
9. After the cake has cooled, dust it with powdered sugar.
10. Serve and enjoy.
