Recipes:
Elotes:
4 cups corn
1 cup mayonnaise
1 cup parmesan cheese
2 lemons, juiced
habenero lime seasoning (or pepper flakes)
Heat corn. Add lemon juice and stir until combined. Add mayonnaise, parmesan cheese, and habenero seasoning.
Serve warm.

Corn Fritters:
3 cups corn
1 cup flour
1 Tablespoon sugar
1 1/2 tsp baking powder
2 eggs, beaten
3/4 cup whole milk
Stir everything together until combined. Heat skillet and add a dab of oil (I used avocado oil). Scoop about 1/2 cup portions of batter into skillet and fry similar to pancakes. Serve with garlic aioli.
