Low Carb Peanut Butter Cookie

Fun and quick cookies that taste great. There are basically 3 ingredients for this, but I add an extra. Plus, whatever toppings you like.

Ingredients:
• 1 cup of peanut butter

• ½ cup of Allulose
• ¼ cup Whey Powder

• 1 egg

Toppings:
• ¼ cup of sugar free jelly
◦ https://www.walmart.com/ip/Great-Valu...
• ¼ cup of sugar free chocolate chips
◦ https://www.walmart.com/ip/Hershey-s-...
• ¼ cup of peanuts
◦ https://www.walmart.com/ip/Great-Valu...

Directions:
1. Preheat the oven to 350 and prepare a cookie sheet pan.
2. In a bowl mix together all ingredients.
3. Shape and flatten and use your thumb to press the center enough to add the jelly.
4. Use a small spoon to add the toppings to the center.

Bake cookies for 8 to 10 minutes.

About Handi Keto:
In the early 2000’s I found out I had MS. At first, it was very controllable and didn’t significantly impact my life. A few years later, I had an “episode” and things changed. Slowly, every year I seem to lose some mobility.
My movement is now like an 80 year old and I get fatigued easily. I use a walker to move around and a cane for shorter distances, where I know a seat will be available.
Unfortunately, I have gained a lot of weight due to my lack of mobility. Because of this, I now have diabetes. I would rather try to control this with diet instead of medication. To that end, I have tried to cut sugar (poison) and carbs out of my diet.
This channel will showcase the dishes that I have made successfully (taste good). I hope that my learning curve with this can help others.
