Soft Molasses Cookie Recipe:
Whisk dry ingredients.
2+1/4 cup all purpose flour
1.5 tsp baking soda
2 tsp ground ginger
1+1/4 tsp cinnamon
1/4 tsp ground cloves
1/4 tsp nutmeg
1/4 tsp salt

With a mixer, beat butter and sugar on high until creamy. Add molasses util combined. Then add egg and vanilla.
3/4 cup unsalted butter at room temperature
1/2 cup brown sugar
1/4 cup sugar
1/4 cup unsulphured dark molasses
1 large egg at room temp
2 tsp vanilla extract

On low speed, slowly mix in the dry ingredients into the wet. Cover with foil or wrap and chill for 1 hour. Preheat oven to 350 F. Keep in mind the cookies won't spread if the dough is too cold so let it sit out for a little bit. Roll the dough into small balls and roll in sugar. Bake for 12-14 minutes or until the edges are set. Let it cool before serving! It will be fresh at room temperature for up to a week. Enjoy :)
